Born in the start of the 19th century, Alejo C. Jiménez’s farm started with a single vision, to produce the best coffee in the world. Some two centuries later that vision is still adhered to as Alejo Kahle Castro seeks to continue refining and producing some of the best coffee on the continent.

This complex and time consuming red honey process includes numerous steps that include centrifugal force, cherry regulation, drying on raised beds for 24h before then being stirred daily from 8am until 2pm before being covered in plastic to maintain temperature over night. This process takes anywhere from 9-12 days depending on weather conditions and is paramount to yielding the correct humidity at the center of the coffee bean which gives beans processed in this way their unique and sweet flavour.
