At La Molienda Farm, Benjamin and his team carefully select and hand-sort only the ripest coffee cherries, removing any defective ones before subjecting them to a controlled 45-hour aerobic fermentation. The cherries are then evenly dried in parabolic dryers with constant monitoring and turning, resulting in a clean, juicy cup that highlights the coffee’s natural flavors and origin.
