Something brilliant is brewing this spring, the Ethiopian Guji, a world-class coffee – it’s here just for you.
This amazing coffee was used by Agnieszka Rojewska from Poland to win the 2018 World Barista Championships in Amsterdam.
Also known as the Washed Diamond, the coffee cherries were grown in the backyards of many small farmers in the Sidamo Region. These coffees are known as “Garden Coffee” and they are harvested between October-January. The coffees are meticulously hand-sorted and only the ripe, red cherries that have a sugar content of 20-22 Brix are used.
What’s really different about this coffee is that it uses the revolutionary Carbonic Maceration (CB) process, which was first revealed by Project Origin founder, Saša Šestić, in the 2015 World Barista Championship in Seattle. After selection, the cherries are pulped and washed, before being fully enclosed in specialised tanks and flushed with carbon dioxide to remove any oxygen. By controlling the fermentation, different kinds of yeast production can be introduced in the tanks and their interaction with the coffee and be manipulated. The controlled yeast activity, temperature and humidity of the tanks results in a slower fermentation process which intensifies the quality of the acidity and texture of the coffee. After fermentation, the coffee is removed from the tank and rinsed, then laid to dry on raised African beds. The coffee is moved every hour to prevent mould and allow airflow between the beans to promote even drying. Drying typically takes anywhere from 12-15 days.
